Proscuitto-Wrapped Asparagus Recipe

Proscuitto-Wrapped Asparagus Appetizer and Vegetable Side Dish Recipe

Simple flavor combinations are often the most delicious. These elegant appetizers require just a few ingredients but deliver incredible results in just a few minutes.

I use this Proscuitto-Wrapped Asparagus recipe for parties in addition to using it as a vegetable side dish.  My son is not a big asparagus fan, but he will eat these as they are wrapped in prosciutto.

For best results, have your prosciutto sliced in your grocer’s meat department (vs. buying pre-sliced packages). This will give you greater control over the thickness of each slice. If your slices are too thick, they will not remain neatly wrapped around the asparagus spears and your appetizers will taste too salty. Request very thin slices that do not fall apart when you handle them.  I usually use the Citterio brand packages at Costco as they are excellent quality and size and roll nicely around the asparagus.

I purchase my asparagus at Costco as I love their prices and the large amount that is in each package.  The picture above is an entire Costco package.

Directions:

Preheat broiler to high. Line a large, rimmed baking pan with parchment paper and set aside.

Cut each strip of prosciutto in half lengthwise. Wrap each trimmed asparagus spear with a strip of prosciutto, starting just below the tip and wrapping toward the bottom.

When finished, the entire spear should be covered, except for the tip.Proscuitto-Wrapped Asparagus Recipe steps

It is best to arrange the wrapped asparagus spears on a lined baking sheet, leaving plenty of room between the spears. At the time I made this recipe, I was out of lining so I had more clean up than if I had used a liner on the baking sheet.  Use a second pan or work in batches, if necessary. I like to brush each spear with olive oil and season with freshly cracked black pepper, to taste. (Avoid adding excess salt because the prosciutto is naturally salty). Please note this step is not necessary, but something I think adds a little more flavor to the asparagus spears.

Place baking pan with prepared spears under the broiler and cook for about 4-5 minutes. Remove pan from oven and carefully turn each spear before placing the pan back under the broiler. Broil for another 2 or 3 minutes, or until the prosciutto is crispy and the asparagus is tender.

Remove spears from the baking sheet and place them on a wire cooling rack to allow excess grease to drain. Dab lightly with a paper towel, remove excess oil. Transfer spears to a serving tray and serve immediately.  Enjoy!

Such a simple but really delicious and healthy recipe. I will check and see if we can have some asparagus delivered to our house tomorrow. If we get lucky enough to get some, I will definitely make this for my family. Nice meal to enjoy during quarantine days!
